Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the apple cider and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Drop tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes or until the cookies are set and lightly golden. Let them cool on a wire rack.
  • For the caramel filling, melt the butter in a saucepan, stir in the brown sugar and heavy cream, and bring to a boil.
  • Reduce heat and simmer for 5 minutes, then remove from heat and stir in the vanilla extract.
  • Once the cookies are cool, spread caramel filling between two cookies to create whoopie pies.
