2 large onions

4 ounces goat cheese
crumbled
1 tablespoon fresh thyme leaves

Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat and add the sliced onions, cooking until they are soft and caramelized (about 15-20 minutes).
- Stir in the balsamic vinegar and sugar, cooking for an additional 2-3 minutes, then remove from heat.
- Roll out the puff pastry on a floured surface and place it in a baking dish or on a parchment-lined baking sheet.
- Spread the caramelized onions evenly over the puff pastry and sprinkle the crumbled goat cheese and fresh thyme on top.
- Season with salt and pepper to taste, then bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- Let it cool for a few minutes before slicing and serving.
