Ingredients
1 ¼ cup (156 g) all purpose flour
¾ teaspoon baking soda
½ teaspoon salt
1 cup (96 g) unsweetened cocoa powder
1 teaspoon espresso powder
1 cup (240 mL) boiling water
½ cup (120 g) sour cream or plain greek yogurt
2 teaspoons pure vanilla extract
1 cup (226 g or 2 sticks) unsalted butter
2 cups (240 g) confectioners’ sugar
½ cup (48 g) unsweetened cocoa powder
10 red gummy worms
cut in half
½ cup Reese’s Pieces
20 mini Reese’s cups
40 candy eyes
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large bowl, mix together the flour, baking soda, salt, cocoa powder, and espresso powder.
- Carefully stir in the boiling water until combined.
- Add sour cream and vanilla extract, mixing well.
- In another bowl, cream the butter and sugar together until light and fluffy, then add the eggs one at a time.
- Gradually mix in the flour mixture, combining all ingredients until smooth.
- Pour the batter into the lined cupcake pan and bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat together the butter, confectioners’ sugar, cocoa powder, and vanilla until smooth, adding milk as needed for consistency.
- Frost the cooled cupcakes and decorate with mini Reese’s cups, Reese’s Pieces, candy eyes, and gummy worms to create turkeys.
Notes
Make sure to let the cupcakes completely cool before frosting to prevent the frosting from melting. This recipe allows for creativity in decorations, so feel free to add other candies if desired.
