Ingredients
1 pie crust
1 egg white
15 oz libby’s pumpkin puree
1 large egg
3 egg yolks
1/2 cup light brown sugar
1/4 cup granulated sugar
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract
12 oz evaporated milk
1 cup heavy whipping cream
3 Tbsp granulated sugar
1/2 tsp vanilla extract
Instructions
- Preheat your oven to 425°F (220°C) and roll out the pie crust to fit your pie dish. Place it in the dish and brush the inside with egg white.
- In a large bowl, combine the pumpkin puree, large egg, egg yolks, brown sugar, granulated sugar, pumpkin pie spice, cinnamon, salt, and vanilla extract. Mix well until smooth.
- Gradually stir in the evaporated milk until fully incorporated.
- Pour the pumpkin mixture into the prepared pie crust.
- Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 30 minutes or until set.
- Remove from the oven and let cool completely on a wire rack.
- For the whipped cream, beat the heavy whipping cream with granulated sugar and vanilla extract until soft peaks form. Serve slices of pie topped with whipped cream.
Notes
For best results, use room temperature ingredients and allow the pie to cool completely before slicing. This pie can be made a day in advance.
