2 large eggs

1 cup molasses

1 teaspoon vanilla extract

1 cup buttermilk

1 teaspoon baking soda

2 cups heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Cinnamon sticks

Star anise

Candied ginger slices

Fresh rosemary sprigs

Powdered sugar for dusting


Instructions

  • Preheat your oven to 350°F (175°C) and grease a wreath cake pan.
  • In a bowl, whisk together the flour, baking powder, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and salt.
  • In a separate bowl, cream the softened butter and dark brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the molasses and vanilla extract until combined.
  • Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, starting and ending with the dry ingredients.
  • In a small bowl, mix the baking soda with a tablespoon of hot water and then add it to the batter, mixing until just combined.
  • Pour the batter into the prepared wreath pan and smooth the top.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake cools, prepare the whipped cream frosting by beating the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cake is completely cool, frost it generously with the whipped cream frosting.
  • Decorate with cinnamon sticks, star anise, candied ginger slices, and fresh rosemary sprigs, then dust with powdered sugar before serving.
