Description
A refreshing and flavorful Greek Pasta Salad loaded with vibrant vegetables, feta cheese, and a zesty lemon olive oil dressing.
Ingredients
1/3 cup freshly squeezed lemon juice
1 tablespoon lemon zest
2 cloves garlic
2 tablespoons finely chopped parsley
1/2 cup extra virgin olive oil
1/2 teaspoon fresh oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound rotini pasta
1/2 small red onion
1 red bell pepper
1 pint cherry tomatoes
1/2 cup pitted Kalamata olives
1/2 cup crumbled feta
1 large cucumber
1/4 cup fresh parsley
salt and pepper to taste
Instructions
- Bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente. Immediately rinse in cold water until cool.
- Soak the onion slices in cold water with a pinch of salt for 10 minutes, then drain.
- In a small jar, shake together all the dressing ingredients and adjust seasonings to taste.
- In a large bowl, combine the cooled pasta, drained onion, peppers, tomatoes, olives, feta, cucumber, and parsley. Toss with 1/4 cup of the dressing, adding more as needed, and season with salt and pepper.
Notes
The dressing can be stored in the fridge for about a week, and you may not need to use all of it in the salad.
