These Mini Crème Brûlée Cheesecakes are a delightful twist on a classic dessert, combining the rich, creamy texture of cheesecake with the luxurious flavors of crème brûlée, all in a convenient individual serving size.

1 cup graham cracker crumbs
3 tbsp melted butter
2 (8 oz) packages cream cheese softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
¼ cup heavy cream
¼ cup granulated sugar for topping
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a medium bowl, combine graham cracker crumbs and melted butter until crumbly. Press mixture into the bottom of each muffin cup to form a crust.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream until fully combined.
- Spoon the cheesecake mixture over the crust in the muffin tins, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.
- Allow the cheesecakes to cool at room temperature before refrigerating for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of granulated sugar on top of each cheesecake and use a kitchen torch to caramelize the sugar until golden and crisp.
Notes
For best results, allow the cheesecakes to chill overnight for a smoother texture. Use a culinary torch for the best caramelization results.
