Ingredients
8 ounces dry elbow macaroni or small pasta shape
¼ medium red onion finely chopped
1 medium bell pepper chopped
2 celery stalks finely chopped
3 radishes finely chopped
1 to 2 medium dill pickles finely chopped optional
½ cup sour cream
¼ cup mayonnaise
1 ½ tablespoons yellow mustard
1 tablespoon apple cider vinegar
½ teaspoon fine sea salt
¼ teaspoon fresh ground black pepper
1 to 2 tablespoons honey optional
Instructions
- Cook macaroni according to package directions. Drain and rinse under cold water.
- Soak chopped onions in cold water for 5 minutes, then drain.
- In a large bowl, whisk together sour cream, mayonnaise, mustard, vinegar, salt, and pepper. Add honey if desired.
- Add rinsed macaroni, drained onions, bell pepper, celery, radishes, and pickles to the dressing. Mix well and adjust seasoning.
Notes
Store in an airtight container in the refrigerator for up to 3 days. This salad tastes even better the next day, making it a great make-ahead dish.
