2 medium sweet potatoes peeled and diced

1 small onion diced
1 red bell pepper diced
1 can black beans drained and rinsed
1 teaspoon ground cumin
1/2 teaspoon chili powder

6 large eggs beaten
1/2 cup shredded cheddar cheese
6 large flour tortillas
Salsa and avocado slices for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
- In a skillet over medium heat, sauté the onion and red bell pepper until softened.
- Add the black beans, cumin, chili powder, and roasted sweet potatoes to the skillet. Stir until well combined and heated through.
- In a separate bowl, beat the eggs and pour them into the skillet, scrambling until cooked through.
