Ingredients
2 large sweet potatoes
peeled and diced
1 medium onion
diced
1 red bell pepper
diced
1 green bell pepper

2 cloves garlic

2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and pepper to taste
4 large eggs
Fresh parsley
chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and green bell pepper, cooking until softened, about 5 minutes.
- Add the diced sweet potatoes and continue to cook, stirring occasionally, for about 15 minutes or until the sweet potatoes are tender.
- Stir in the minced garlic, smoked paprika, ground cumin, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.
- Create four small wells in the sweet potato mixture and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are set to your liking.
- Garnish with fresh parsley and serve warm.
