Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and green bell pepper, cooking until softened, about 5 minutes.
  • Add the diced sweet potatoes and continue to cook, stirring occasionally, for about 15 minutes or until the sweet potatoes are tender.
  • Stir in the minced garlic, smoked paprika, ground cumin, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.
  • Create four small wells in the sweet potato mixture and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are set to your liking.
